Grandpa knows best….

It’s interesting to watch our old friend Kit Pharo move in the direction of becoming a “healthy eating” advocate.  For those of you who don’t know him, Kit is a very successful Colorado rancher who raised himself from rodeo vagabond to head what may be the largest bull stud operation in the country.

We’re not sure whether it’s becoming a grandfather, or just age, but Kit now regularly writes about eating right.  Until recently, he’s been far more into raising cattle at the lowest cost than he was about the quality of the meat they produced.  Here’s the latest from his on-line blog:

Carbage –

Several people said our pre-sale meeting with Peter Ballerstedt was our best meeting ever.  He presented evidence showing that the “fat-is-bad” hypothesis is not only wrong, but likely responsible for our current epidemic of chronic illnesses.   Peter believes a healthy diet is one that is high in animal protein and fat.

I learned a new word that night – carbage.   Peter used this word to describe carbohydrates.   He believes that we would be MUCH healthier with a diet that contains very little (or no) carbohydrates.  Most people eat way too much carbage that contains high levels of processed grains and sugar.   Most people drink way too much carbage in the form of soda pop.

I have been on an extremely low-carbage diet – and, for the most part, I love it.   I love meals that consist of meat, eggs and/or cheese.   Who wouldn’t?   I love salads that are topped with meat, eggs and/or cheese.   Although I have been eating like a horse, my wife Deanna says I am losing my tummy.   Since this is a diet that I really enjoy, it is a diet that should be easy to maintain.   The carbage that I seem to miss the most is potato chips.   I have replaced potato chips with pork rinds.

I love a BIG breakfast.   I firmly believe breakfast is the most important meal of the day.   I’ve been told that we should eat like a king for breakfast, a prince for lunch and a pauper for supper.   I told Deanna that I feel very fortunate to have a wife who is willing to get up and fix me a BIG breakfast.   She responded by saying, “Most men won’t stick around the house long enough to eat a good breakfast.”   If you are too busy to eat a good breakfast, you are too busy.

No time to comment.  Off for a big breakfast of eggs and a nice, smoked trout.  (Of course we eat fish here at Thistle Hill!)
